Barley Water

1. 60 g (2 oz) barley.                                                                    3. 1.25 l (1 quart) water.
2. 1/2 lemon rind.                                                                         4. 1 dessertspoon sugar.


    Wash the barley well and put it in a saucepan with the cold water. Add the rind of the lemon, very thinly pared off, and boil for 1/2 hour. Afterwards add the sugar and strain into a jug to cool.
